Dried mushrooms add a wonderful flavour, but they need soaking, cooking and planning ahead. Mushrooms in a jar solve this problem – they’re already prepared, have a soft yet firm texture, and can be added to a dish at the last minute.

Their second advantage is their appearance. Whole caps and pieces of mushroom look much better on a plate than finely chopped dried mushrooms. That is why jarred mushrooms are ideal for dishes where the mushrooms are meant to be visible – in salads, starters and sauces containing chunks of mushroom.

The best results are achieved by combining both types: dried porcini for flavour and tinned mushrooms for texture. We discuss dried mushrooms in more detail in the guide Dried mushrooms – how to soak and cook them.

Porcini, chanterelles or bay boletes – which ones should you choose?

Mushrooms in a jar

Flavour and texture

Christmas uses

Porcini mushrooms 300 ml / 900 ml

A refined, full-bodied flavour; firm flesh

Mushroom sauce for roasts, stuffings, croquettes, and cabbage with mushrooms

Chanterelles 300 ml / 900 ml

A delicate, slightly peppery flavour; a golden colour

Cream-based sauces, starters, salads, a side dish for fish

Bay Bolete 300 ml

A distinctive flavour; withstands long cooking times well

Bigos, cabbage with mushrooms, łazanki, soups

If you’re not sure where to start, go for porcini mushrooms – they’re the most versatile mushrooms for festive cooking. Squeeze out 1 kg of sauerkraut (if it is very sour, rinse it), cover with a little water and boil for 40 minutes. Fry 2 onions in oil until translucent, then add the contents of the jar bay boletes or porcini mushrooms (drained and chopped) and fry for a few minutes. Combine with the cabbage, season with pepper, allspice and a bay leaf, and simmer for a further 20 minutes. If you have dried porcini mushrooms, add their stock – this will give the dish an even deeper flavour.

Dumplings with cabbage and mushrooms

Mince or finely chop the cooked and drained sauerkraut (approx. 500 g). Fry it with the onion and chopped tinned mushrooms (300 ml jar). Season with salt and pepper. The filling must be thoroughly cooled and not too moist. Spoon it onto circles of dumpling dough, seal the edges and cook in salted water for 3–4 minutes after they float to the surface. Serve sprinkled with spring onions.

Cabbage and mushroom croquettes to go with borscht

Fry some thin pancakes. Place a spoonful of the cabbage and mushroom filling (as for dumplings) on each one, then roll them up into croquettes with the sides tucked in. Dip them in beaten egg and breadcrumbs, then fry until golden brown. The croquettes can be prepared the day before and fried just before serving.

Porcini mushroom sauce for a festive roast

Sauté the shallot in butter until translucent, then add the chopped jarred porcini mushrooms and fry for 5 minutes. Pour in 300 ml of stock or meat drippings, bring to the boil and simmer for 10 minutes. Thicken with a tablespoon of flour mixed with cream, and season with salt, pepper and fresh thyme. This sauce goes well with roast pork neck, pork loin, turkey and duck.

Christmas bigos

Bigos is a dish that gets better every time you reheat it. Add a jar of bay boletes or porcini mushrooms to a pot containing sauerkraut and sweet cabbage, meat, sausage and prunes – ideally along with the water used to soak a few dried mushrooms. Add the mushrooms from the jar during the second half of the cooking time so that they retain their shape.

Chanterelles in cream as a starter

Drain and dry the contents of the jar tap. Fry them in butter with finely chopped onion, pour in 100 ml of 30% cream and cook until the sauce thickens. Season with pepper and parsley. Serve on rye bread croutons or in small ramekins as a warm starter.

Mushroom and pickled vegetable salad

Combine the drained mushrooms from the jar with the chopped ones pickled vegetables, red onion and parsley. Drizzle with linseed or rapeseed oil and a little vinegar with honey. It’s a quick, flavourful salad to serve with meat and bread.

Mushrooms on the Christmas Eve table – a bit of tradition

Mushrooms have held a special place in the Polish Christmas Eve dinner for centuries. The Christmas Eve supper was traditionally a meat-free meal, which is why it was mushrooms – alongside fish, cabbage, poppy seeds and dried fruit – that gave the dishes their distinctive, hearty flavour. According to old beliefs, the table should feature produce from the forest, the fields, the orchard and the water, and mushrooms symbolised the forest. That is why, in many regions of Poland, mushroom soup, uszka, cabbage with mushrooms and dumplings with mushroom filling are an essential part of the Christmas Eve dinner. In some homes, mushrooms in brine are also served as a starter or an accompaniment to herring.

The selection of Christmas Eve dishes varies depending on the region and family traditions, but mushrooms feature in almost every one of them – in soup, stuffing, cabbage or sauce. In Warmia and Masuria, a land of forests and lakes, mushrooms have always been an important part of the winter larder.

What to do with mushrooms after the festive season?

If you have an open jar of mushrooms left over after the festive season, use it in your everyday meals:

Mushroom risotto – Add the tinned mushrooms towards the end of cooking the rice, along with the butter and Parmesan.

Scrambled eggs with chanterelles – Chanterelles fried in butter with onions make for a classic breakfast.

Pasta with mushroom sauce – mushrooms, cream, garlic and parsley.

Potato bake – layers of potatoes, mushrooms, onions and cheese, baked with cream.

Tart or quiche – mushrooms with leeks, eggs and cheese on a shortcrust pastry base.

Groats with mushrooms – Buckwheat groats or pearl barley with fried mushrooms and onions make for a filling one-pot meal.

How many jars of mushrooms should I buy for Christmas?

Approximate quantities for a family of 4–6 people:

Dish

Number of mushrooms in the jar

Cabbage with mushrooms (1 kg of cabbage)

1 jar, 300 ml

Dumplings with cabbage and mushrooms (approx. 50 pieces)

1 jar, 300 ml

Croquettes (approx. 12 pieces)

1 jar, 300 ml

Roast gravy (serves 4–6)

1/2–1 300 ml jar

Bigos (5-litre pot)

1 jar, 900 ml

If you’re preparing several mushroom dishes, a 900 ml jar is a better option – it’s enough for a few dishes, and once opened, you can divide it into portions and use it up over a few days.

How should you store mushrooms in a jar before and after opening it?

Before opening Store the jars in a cool, dry and dark place – in a larder, cellar or cupboard away from the hob. Check the best-before date on the label.

Once opened Keep the jar in the fridge, tightly sealed. The mushrooms should be covered by the brine – those sticking out above the surface will go off more quickly. Use a clean, dry spoon or fork to remove the mushrooms. They are usually added to dishes whilst frying or stewing, so that they absorb the flavour of the dish. Always follow the instructions on the label.

Do you need to rinse tinned mushrooms?

Not always. For bigos and sauerkraut, simply draining them is enough. For delicate sauces and salads, you can give them a quick rinse under cold water so that the flavour of the brine isn’t too strong.

How long can you keep an opened jar of mushrooms?

In the fridge, tightly sealed and with the mushrooms covered by the brine – for the period specified by the manufacturer on the label.

Are tinned mushrooms suitable for ushki?

Yes, although traditional uszka are usually made with dried mushrooms, which give them a more intense flavour. A good alternative is a filling made from a mixture of tinned mushrooms and a few soaked dried porcini mushrooms.

Which tinned mushrooms go best with bigos?

The most commonly used mushrooms are bay boletes and porcini, which stand up well to long simmering and give the bigos a woodland aroma.

Are tinned mushrooms a good gift?

Yes – a jar of porcini or chanterelle mushrooms makes a practical gift for people who enjoy cooking.
